Introduction

Linda used to make this for us and i liked it so much that i continued making it for my own family. Its yummy. Ingredients

    one whole chicken, boiled and deboned
    one can rotell tomatoes
    one can cream of chicken soup
    canned green chilipeppers (small can)
    fresh red peppers
    fresh onion
    milk
    cheddar cheese
    mexican white cheese
    corn tortillias
    salt, pepper, and a little paprika on the top.

Directions

you can use one of those whole chicken fryers from the grocery uncooked. we always did, its cheap and you get a LOT of meat from them.
Boil the chicken, let cool and debone it. salt n pepper the chicken meat, set meat aside, freeze bones for another time, to roast and make broth from.
mix these ingredients in a big bowl: cream of chicken soup, rotell tomatoes, small diced peppers, small diced onions, milk
get a LARGE glass pan, spray with cooking spray, drop a ladel full of the mixture in the bottom and sprad to coat the bottom of the pan. then a layer of chicken, a layer of tortilla quarters (torn, and laid to fit) a layer of the cheeses. Then another ladle of the mixture, another layer of chicken, tortillias, cheeses, keep repeating until its all used up.
Make sure the top layer is all cheese, sprinkle a little paprika on the top of the cheeses, and put the whole glass pan in the oven at 375 and bake for thirty minutes so it will all melt together. let cool alittle, cut into sections, serve.
(serves five with one or two extra for company)
