Ingredients

Crust:
1 1/4 cup crushed graham cracker crumbs
1/3 cup sugar
1/4 cup butter, melted
Filling:
3 - 8 oz. packages cream cheese, softened
1 cup sugar
3 eggs
2 tablespoons vanilla extract
Directions
Combine ingredients for crust. Press into the bottom of a 9" springform pan. Bake at 350 degrees for 10 minutes. Cool.
Meanwhile, using an electric mixer, beat cream cheese. Gradually add sugar as you are beating the cream cheese, until mixture is light and fluffy. Add eggs, one at a time, mixing at low speed until fully incorporated. Add vanilla extract.
Pour into prepared crust. Bake in 350 degree oven for 60 minutes or until lightly browned on top and set. Remove from oven, cool to room temperature. Cover with plastic wrap (touching top of cheesecake) and chill in fridge over night or at least 2 hours.
Run a knife around edge of pan before releasing spring to remove ring. Using a long flat spatula or knife, loosen crust from pan bottom and slide onto a serving plate. Cut into fourths and then cut each quarter into four pieces.
Makes 16 pieces if cut as above.
