    6 oz smoked chicken sausage
    1 cup onion chopped
    1 clove garlic minced
    1/2 t. fennel seed
    1/2 t. red pepper flakes (opt)
    1 lb. dry lentils, picked over and rinsed
    3 T. chicken soup base or bouillon
    2 qts water
    1 10oz boxes frozen chopped spinach
    Parmesian cheese for garnish.


Sayte' sausage, onion, and garlic in a Dutch oven. Add fennel and red pepper flakes and stir. Stir in soup base and dry lentils and toss until everything is coated. Add water. Bring to a boil. Reduce heat, cover, and simmer for 30 to 45 mins. or until lentils are tender. Add spinach and cook an additional 10minutes to heat through. Sprinkle with Parmesian cheese, if desired.

Makes 8 - 1 1/2 cup servings.
