Ingredients

    1 cup roasted eggplant
    1 cup ccoked or canned garbanzos
    3 tbsp tahini paste
    5 cloves garlic mashed
    1 tsp olive oil
    1/2 tsp salt
    1 oz or 3 tsp lime juice (preferably key limes)


Directions

1. Roast 2-3 med. size eggplants directly over flame until soft and black.. Place in cool water, then peel blackened skin off and rinse.
2. Place all ingredients in food processor or blender and blend until smooth.
3. Cool and use as dip for veggies, over rice, salads and for pita or other types of bread.

Makes about 1.5 cups or 4-5 servings.
