Introduction

Ingredients

1 medium onion, chopped
1 T olive oil
5 turkey sweet Italian sausages
1 quart low sodium, fat free beef broth
2 cans great northern beans, rinsed and drained
2 bunches kale, torn into large pieces
Directions
In a large dutch oven, sautee 1 cup chopped onion in 1 T olive oil.
Once onion is clear, add italian sausage. Cook partially (outsides are browned), then remove and slice into 1/2 slices. Return to pan.
Add 1 qt low sodium beef broth and 2 cans great northern beans (rinsed and drained). Bring to a boil.
Reduce to a simmer until the beans are tender (about 5 minutes).
Add 2 heads of kale, torn into large pieces. Kale will srhink as it cooks. Cook until kale turns bright green. The kale should still have a slight crunch to it- overcooking will make it extremely bitter.
Top with shredded parmesan cheese.
Makes 8 1 1/2 cup servings.
