Ingredients

In two-cup glass measuring cup, measure out:
1 cup lukewarm water
Add the follwoing two ingredients, stir with whisk, and set aside:
1/4 cup brown sugar
4 tsp yeast
In big bowl, measure out:
2 Tablspoons salt
2 Tablespoons olive oil
1/2 cup wheat bran (or oat bran)
1/2 cup wheat germ
2 cups old-fashioned oats
1 cup corn meal
2 cups wheat flour (sometimes called graham flour)
4 cups lukewarm water
To the above ingredients, add the yeast-sugar water. Use the whisk to thoroughly mix everything.
Now add up to 6 cups of unbleached flour. Work it in. Add up to 1/2 cup of flour, if needed.
Directions
Cover the bowl with a cloth and set aside for at least one hour, or until the dough has nearly doubled in size.
Grease 4 loaf pans.
After one hour, punch down and divide the dough into four parts.
Flour the rolling pin and work surface.
Roll out each (1/4) piece into a rectangle. Roll it up tightly. Press down each side. flatten the excess and tuck it under each end of the bread roll. Put into greased pan, cover with cloth, and let rise one more hour.
Oven bake at 425F for 21 minutes. Cool on racks.
