Introduction

I just made this out of left-overs one Saturday afternoon. Feel free to experiment with ingredients, quantities, flavors.

Ingredients

    3 tbsp Onions, finely chopped
    3 Garlic cloves, crushed
    1/2 tbsp olive oil
    1/2 cup Yogurt, plain, low fat
    1/4 cup Half and Half Cream
    3 oz Chicken Breast, no skin
    1 1/2 tbsp Curry powder
    1 tsp Crushed Red Pepper flakes
    1 cup Egg Noodles, cooked

Directions

Saute chopped onion and crushed garlic until soft. Add in yogurt and half&half (sub extra yogurt for half&half if desired) and heat through. Add curry powder and chicken. Stir, then add cooked egg noodles. Simmer a couple minutes, then serve. Season with pepper flakes.

Makes 1 entree-sized serving or 2 smaller servings.
