Ingredients

    Channa Masala seasoning mix 1-2 tablespoons
    black mustard seed 1 tsp
    cumin seed 1 tsp
    2 cans garbanzo beans(drained)
    1 can diced or crushed tomatoes
    1 can cubed potatoes or 1 medium cubed potato
    2 tbsp ginger/garlic paste(or 1 each of ginger paste and crushed garlic)
    olive oil 3-4 tbsp

Directions

cut onions in long thin strips, open cans and drain and rinse. put olive oil in large wok or pan. add black mustard seed, cumin seed and onion. cook until onions are transparent. add ginger garlic paste, and then tomatoes. add channa masala mix, then canned beans and tomatoes and approximately 1 can of water. bring to boil then simmer for at least 30 minutes.Add salt at the end. You can also add fresh cilantro(coriander) leaves at the end. eat over basmati rice or with whole wheat tortillas, but traditionally served with chapati(a whole wheat flat bread) NOTE: you can find channa masala powder, ginger/garlic paste, black mustard and cumin seed, frozen chapati at your local Indian Grocery.
