Ingredients

4 cups wholemeal
1 cup plain flour
1/2 cup sesame seeds
1 tsp salt
2 cups luke warm water
2 tbs sunflower oil
4 cups oil for frying
Directions
20 medium-sized puris
1. Put in the flour, sesame seeds and salt in a bowl and rub in the oil
2. Add the luke warm water and mix untill the flour stick together and you can knead it for 5 minutes to it is smooth and firm.
3. Cover with a cloth for 20 minutes.
4. Knead the dough again for 1 minute
5. Divide the dough to 20 portions and roll them into balls and cover them with a damp cloth.
6. Preheat the oil in a wok.
7. Smear the rolling pin with oil and roll the balls thin and even.
8. Lay a puri on the surface of the oil, it will sink for a moment, then rice to the surface.
9. Immediately submerge it with soft pushes until it inflates like a balloon.
9. Turn around,fry to golden brown
10. Drain in a collar.
11. Ready to serve.
