Ingredients

    boil and drain Penne and add back to pot
    Cook and drain spinach
    pan fry chicken with cooking spray and season to taste
    Rough chop Chicken
    dice onion & garlic
    Add marinara sauce, onion & garlic to pot to simmer for 5 minutes.
    grated mozzarella cheese
    add spinach to sauce and stir it through
    Pour sauce mixture over penne
    add chicken and 2/3 of the grated mozzarella to penne
    coat baking pan with a little cooking spray and add the pasta to the pan. Sprinkle the remaining 1/3 mozzarella to the top of the pasta
    Bake for 20 minutes at 350 degrees
