Introduction

These are not low-cal, but pretty low on the impact scale for glycemic index. They are not high in carbs or sugar when compared to regular cookie recipes. Ingredients

    1/2 c unsweetened applesauce
    1/4 c olive oil
    1/2 c light brown sugar
    1 & 1/2 c sucralose (splenda)
    2 large eggs
    1 Tbsp vanilla extract
    1 Tbsp cinnamon
    2 tsp baking soda
    2 tsp baking powder
    1 tsp salt
    1 & 1/2 c whole wheat pastry flour
    3 c old fashioned oatmeal (uncooked)
    1 c semi-sweet chocolate chips

Directions

Blend brown sugar, sucralose, applesauce,oil,, eggs, and vanilla in large bowl. Spoon flour into measuring cup to avoid packing. Mix flour, baking soda, baking powder, salt, and cinnamon in a separate bowl before adding to wet mixture in the large bowl. Add oats and chips. Turn all ingredients together until evenly mixed throughout. Spoon onto cookie sheets which have been sprayed with a non-stick product. Bake at 350 for approximately 10 minutes. Makes 3 dozen.
