Ingredients

    2 tbsp olive oil
    .8 lb organic chicken thighs
    1 large organic yellow onion
    2 tbsp crushed garlic
    1 organic yellow pepper
    1 can organic black beans
    1 can sweet corn
    1 can chopped tomatoes
    1 tbsp cumin
    1 tbsp oregano
    1 tsp hot pepper powder (or to taste)

Directions

Remove seeds and stem from pepper, then chop pepper up fine. Trim fat from chicken and cut it into 2-inch chunks. Sauté onions and garlic in olive oil until onions are translucent. Add cut up chicken thighs to pan, add spices, and brown all over. Place chicken, onions, garlic, peppers, black beans, corn and tomatoes in slow cooker and stir. Cook on high setting for one hour, then turn down to low setting and cook for 6-8 hours.

Makes 8 1-cup servings.
