    14 oz Low Sodium Chicken or Vegetable Broth
    3 cups water
    2 tbsp Parmesan Cheese Grated
    2 tbsp Olive Oil
    1 Shallot
    8 cups Mushrooms - Assorted (or more if you have more)
    1/2 cup Sherry - Cooking
    1/3 cup Heavy Whipping Cream (or just whipping cream)
    Salt and pepper to taste
