Ingredients

    1 whole cauliflower (about 4 cups)
    2 Tbsp fat-free margarine or yogurt spread
    4 Tbsp whole grain flour
    4 cups chicken stock/broth
    1 cup cream (white and dried milk works too)
    2 egg yolks beaten

Directions

Makes 6 1 cup servings.
Divide cauliflower into small pieces.

Melt margarine in large pan, remove from heat and throughly stir in flour. Cook for 1 minute.

Stir stock into flour mixture. Add cauliflower and bring mixture to a boil.

Simmer for 30 minutes.

Add cream or milk mixture and add egg yolks. Season with pepper and/or salt.
