Recipe I got from a Pillsbury Slow Cooker Cookbook & I changed up a little to make it healthier & suit our tastes. Great quick & easy slow cooker meal with low calories & fat per servings! Ingredients

    1lb small unpeeled red potatoes, cut into 1-inch pieces (approx 3 cups)
    2 1/2 cups (1 small bag) ready to eat baby carrots
    1 small white onion, cut into strips
    1 cup sliced fresh mushrooms
    6 boneless skinless chicken thighs (approx 1 1/2lb)
    1/2 tsp salt
    1/8 tsp pepper
    1 jar (12oz) fat free chicken gravy
    12oz frozen sweet peas in steamable packaging

Directions

1. In 4-5qt slow cooker place potatoes, carrots, onions & mushrooms. Sprinkle chicken with salt & pepper, place on vegetables in cooker. Pour gravy over top.
2. Cover & cook on low setting 8-10 hours
3. Steam peas in microwave per package directions & stir in right before serving
Makes 6 servings approx 1 1/2 - 2cup each
