Ingredients

Cake:
Flour, white, 3 cup
Granulated Sugar, 2 cup
Pumpkin Pie spice, 1 tbsp
Baking Powder, 1 tbsp
Salt, .25 tsp
Egg, fresh, 4 large
Corn or Canola Oil, .5 cup
Milk, 1%, .5 cup
Pumpkin, canned, without salt, 15 oz can
Vanilla Extract, 2 tsp
Glaze:
*confectioner sugar 3/4 cup
Lemon juice, 1.5 tbsp
Directions
* Preheat oven to 375*
* In a large mixing bowl, use a pastry cutter to blend all the dry ingredients for the cake together
* In another bowl, mix all the wet ingredients together
* Now pour the wet ingredients into the dry ingredients and mix thoroughly
* Pour into a large prepared baking pan (spray with some cooking spray and dust with flour)
* Bake for 55-60 mins or until an inserted toothpick comes out clean
* As the cake is cooling, prepare the glaze by mixing the confectioner's sugar and lemon juice; I found this a little thick, so I added a teaspoon or so of water
* When the cake is no longer hot, but warm, spread the glaze over the cake and serve!
