Introduction

My take on a recipe from Hy-Vee Enriched Bran Flakes. My take on a recipe from Hy-Vee Enriched Bran Flakes.
Number of Servings: 12

Ingredients

    1.5 Cups Hyvee Enriched Bran Flakes
    1 cup mashed bananas (about 3 medium bananas)
    1 cup whole wheat flour
    1 cup vanilla light soy milk
    3 Tbs olive oil
    1 large egg
    1/8 cup brown sugar
    1/8 cup splenda blend
    1/2 tsp baking soda
    2 tsp baking powder
    1/8 tsp nutmeg
    dash of cinnamon

Directions

Preheat oven to 400 degrees and grease or line 12 cupcake pan.

Mix cereal, banana, milk, olive oil, and egg in a bowl well. Let stand 5 minutes.

In a seperate bowl mix flour, sugar, baking soda, baking powder, nutmeg, and cinnamon. Add cereal mixture and stir until blended.

Separate evenly into pan. Bake for 20 to 25 minutes you can stick and toothpick in the middle and it comes out clean.
