Ingredients

1 1/2 cup sugar
1 1/2 cup Splenda
1 cup unsweetened applesauce
4 eggs
15 oz can pumpkin
1 1/2 tsp salt
1 TBSP pumpkin pie spice
1 tsp cider vinegar
3 1/3 cup whole wheat flour
2 tsp baking soda
2/3 cup cold water
Directions
Pre-heat oven to 350 degrees and spray muffin tin with non stick spray.
Mix sugar, Splenda, and applesauce with electric
mixer for about 45 seconds. Add eggs and pumpkin and beat well. Add salt, spice, vinegar, and 1 cup of the flour; beat. Mix soda and water together and add to mixture; beat until combined. Add the rest of the flour and beat for one minute.
Pour 1/3 cup batter into each muffin cup. Bake for 15 minutes or until done. This makes about 30 muffins. If you are like me and don't have 30 muffin cups to bake at once, make sure you re-spray your cups before refilling and baking again.
