Ingredients

    1 package Trader Joe's Turkey Meatballs*
    1/2 c dry black beans
    1 T canola oil
    1 green bell pepper
    1/4 c chopped onion
    3 cloves garlic
    2 c Trader Joe's Organic, low sodium vegetable broth
    1 c water
    1 T of your favorite spice(s) (no salt added)
    1 - 14 oz can diced tomatoes
    1 package frozen corn
    2/3 c dry Minnesota Wild Rice

    *Can substitute with beef meatballs, etc.

Directions

In 2 cups of water, soak black beans overnight.

In a large slow cooker, cook black beans and vegetable broth on low-setting for 2 hours.

Add remaining ingredients, cook on high until beans and rice are tender, and meat is cooked through.

After ingredients are tender/cooked through, add milk and flour for a thicker soup. If you want a thinner soup, add more water or vegetable broth.

MAKES 8 SERVINGS (2 meatballs per serving)

    Very Good
    I used brown rice instead of wild because I didn't have the wild rice. It was quite tasty. I added a red bell pepper and more corn. I also used homemade turkey meatballs. - 10/7/13
