Ingredients

    1 lb lean stewing meat (I used eye of round)
    2 cups dry egg noodles ( I used wheat) makes 4 cups cooked
    2 cups beef broth
    2 cups water
    1 med onion chopped
    4 tsp Dijon Mustard or to taste (I used Jack Daniels)
    2 Tbsp Extra Vuirgin Olive Oil

Directions

Place olive oil in large pot along with chopped onion and stewing meat and seasonings of choice, brown meat on all sides.
Add beef broth and water bring to a boil then lower heat to simmer and cook for 3-4 hours is until meat has reached the desired tenderness.
Once meat is done either place egg noodles in the pot with the meat or cook seperate (will have more flavor cooked in the pot with the meat) and cooked until el dente.
Served with a crisp green salad makes a good meal.
This should make right at (6) 1cup servings. Actual serving should be 3 oz of meat with just a little of the gravy and 1 cup noodles.
