    1 cup white rice, prepared
    1 can tomato sauce, no salt
    1 can diced green chiles or jalapenos
    2 cups chick peas
    1 package frozen spinach, defrosted
    1/2 a large onion, chopped
    6 cloves of garlic, chopped
    2 tsp olive oil
    1 Tbs cider vinegar
    1 container no fat greek yogurt
    .75 cup of monterey jack
    3-4 egg whites
    bread crumbs


(8) 2" slices
combine cooked rice, tomato sauce, sauteed onion and garlic, spinach and chickpeas in two bread pans.
mix yogurt and egg whites and pour on top.
add layer of cheese.
bake at 375 until browned.
