Introduction

Ingredients

2 boneless, skinless chicken breasts
1/3 cup parmesean cheese (finely grated)
1 tsp dried oregano
1 tsp dried basil
1/2 tsp dried parsley
Dash of salt and pepper
Directions
If chicken breasts are frozen, thaw before hand. Preheat oven to 350 degrees F. In a bowl (preferably a low one so coating chicken is easy) combine cheese and spices. Coat the chicken breasts thinly, then if any mixture is left, sprinkle a little more on the top.
Put chicken in a glass baking dish that has been lightly sprayed with non-stick spray, or lightly coated with olive oil to prevent sticking. Using an oven-save digital probe thermometer, insert the probe into the thickest part of the chicken breast until you think it is centered. DO NOT PIERCE CHICKEN ALL THE WAY TO THE BAKING DISH. Place on the middle oven rack until temperature of chicken reaches 160 degrees.
OR, cook chicken for about 30 minutes, then cut open thickest part of breast to test for doneness, chicken should be white all the way through and juicy, should not be pink.
Serve with brown rice and steamed veggies, or whole wheat pasta with marinara sauce.
