This is a healthier twist on a classic creamy turkey and wild rice soup that hails from Minnesota. Easy, quick. Get Lundburg wild and brown rice blend at wal-mart. Comfort food without the fat and calories. Even our family's pickiest eater loved this soup.

Makes 4 servings, about 1 3/4 c each.

  • Very good recipe! I followed the Eating Well version by adding sour cream (more calories), but used the Lundberg rice blend as you suggested (cooked it 1st). I also added fresh thyme and tarragon. My husband loved it! I'll definitely make this again whenever I have leftover roast chicken or turkey. - 10/28/10
