Ingredients

1 lb lean ground beef or chopped boneless skinless chicken breasts
1 Old El Paso Soft Taco Bake dinner Kit
1 cup water
1 can (16 oz) kidney beans, drained, rinsed
1 jar (16 oz) Old El Paso Thick n Chunky salsa
1 cup shredded Monterey Jack cheese (4 oz)
Directions
1. Heat oven to 400. In skillet brown beef or chicken, drain. Stir in Seasoning Mix, water and half of Cheese Sauce. Heat to boiling, stirring occasionally. Reduce heat to medium-high. Simmer, uncovered, 4 min, stirring occasionally. Add kidney beans & remaining cheese sauce, heat til hot.
2. In ungreased 2-qt casserole, place 1 tortilla. Layer with 1/4 of salsa, beef mix, and cheese. Repeat layers, using all ingredients, ending with cheese on top.
3. Cover and bake 17 to 22 minutes, or til cheese is melted. Let stand 5 minutes.

I use 1/2 fat free 1/2 reduced fat cheeses. 1/2 ground chuck 1/2 ground turkey. Low sodium beans. You could use ALL Fat free cheese, and all ground turkey, or chicken rather the beef.
Oh and btw, 1/6 of the orginal recipe is only 440 calories.A whopping 1470 in sodium though, and 19 grams of Fat! - 5/7/10

Thanks Wildflower. I liked some of the recipe - but it was so high in calories the way it was listed that I said never again.
