Introduction
Inspired by the Tomato Basil Pasta entree at Cheesecake Factory. Spinach added for vitamins/nutrition; basil subtracted because I'm not a huge fan of it! Ingredients

8 oz. low sodium or no salt added diced tomatoes
4 oz. (uncooked) Barilla Plus Penne Multigrain Pasta
4 oz. chicken breast, no skin
1/2 of a 10 oz. package of frozen spinach
2 oz. fresh mozzarella
Directions
Prepare pasta according to package directions.
Place chicken in non-stick pan; cook on high heat on stovetop for 1 minute on each side; lower to medium heat, cook covered for 4-5 minutes on each side; then cut chicken up into small pieces.
Prepare frozen spinach according to package directions.
Heat tomatos in microwave or on stovetop.
Chop mozzarella into small pieces.
Combine all ingredients and enjoy!
Makes 2 servings.
