    4 clementines peeled, separated and cut into pieces
    1 roma tomato, chopped
    1/2 red bell pepper, diced
    1 fresh jalapeno, seeded and chopped
    1/2 purple onion, chopped
    1 garlic clove, chopped finely
    cilantro, chopped
    1 tsp olive oil
    1 tbsp lime juice
    dash salt

    2 large (751g) cans black beans, drained and rinsed
    2 eggs
    1/2 cup bread crumbs
    1/2 purple onion, finely chopped
    cilantro, chopped
    2 garlic cloves, minced
    1 tsp ground cumin
    1/4 tsp salt
    dash cayenne pepper


Chop the Salsa ingredients and combine well in a bowl. Let sit for 1 hour for flavors to blend.

Drain & rinse black beans. Place 3 cups in a bowl. In separate bowl, combine all of the other beans & ingredients. Mash with a potato masher then add to other beans. Blend well with hands.

Preheat oven to 375. Spray 2 cookie sheets with olive oil spray. Measure out 1/3 cup of bean mixture per patty. Place on cookie sheets and flatten (12 patties.) Bake 10 minutes then flip and bake 10 minutes more. Serve with a spoon full of orange salsa.
