Just really hungry didn't get to eat lunch and had these ingredients in my fridge and it was really good. My 10 year old daughter even liked it and ate it with crackers. Ingredients
-
10 cherry tomatoes halved
2 cups fresh spinach
1 large thin sliced yellow squash
3 bacon slices ( pull off large pieces of fat before cooking)
5 medium diced green onions
1 tsp mrs dash tomato and herbs
1/2 tsp cracked black pepper
Directions
* In medium to large pan cook bacon with black pepper, til ends are crisp. Then set aside on paper towel and once its cooled cut up into bits. If the pan has more than about a teaspoon of the bacon grease left I would pour off enough to make only a tsp. left.
* Then place the diced green onion and squash into pan and cook til the squash is almost soft.
* Next start folding in the fresh spinach small hand full at a time. Once all the spinach is into the pan let it cook for just a minute while folding.
* Before the spinach is done add the cherry tomatoes and bacon. Only a cook until spinach is soft, which isn't long.
Would probably be good topped with a shake of Parmesan cheese. (Not included in calorie count)
Makes a good side or I just eat it for a light lunch or dinner with crackers. (Wheat thins or Kellogs whole grain)
Makes 4 servings 1 cup each.
