Introduction

Ingredients

    1 1/4 c. whole wheat flour
    1 tsp. baking soda
    1 tsp. baking powder
    1 T. brown sugar
    1 T. cinnamon
    1 egg
    2 egg whites
    1 c. lowfat buttermilk
    1 T. vanilla
    1/2 of a small apple, cored and chopped up small

Directions

In a medium sized bowl blend well the flour, baking soda, baking powder, brown sugar and the cinnamon.

In a separate bowl, beat the egg and the egg whites. Add the buttermilk and vanilla. Stir this into the dry ingredients. Add the chopped apple and stir just until combined.

Spray a griddle with a non stick cooking spray. Heat on medium heat. Pour 1/3 cup of pancake batter for each pancake. Using a spoon spread batter to make a large sized pancake (do this quickly.) When pancake is medium brown and top of pancake is "set", flip over to finish cooking.

Serve with your favorite fruit topping or syrup.

Makes 8 pancakes.

    As a guy I like a hearty breakfast and these not only were substantial but are very good! Love the cinnamon and apple flavors and am so glad to have a healthy alternative I can eat! Delicious!! - 3/13/10

    A good hearty breakfast dish. I did add 1/4 water because I found the batter quite thick. This worked well. I would put in at least a whole apple as I found the fruit to be a bit scarce. - 2/3/13

    These pancakes are great! I love pancakes and this receipe is a winner. They are light and fluffy and so tasty. I did not use buttermilk but used nonfat milk and they were fine. I will make these pancakes again. - 6/26/11
