Introduction

Serve over brown rice and topped with cottage cheese..NOT in the calorie count. Serve over brown rice and topped with cottage cheese..NOT in the calorie count.
Number of Servings: 12

Ingredients

    1 onion chopped
    1 15 oz can black beans, rinsed and drained
    1 15 oz can kidney beans, rinsed and drained
    2 C corn
    8 oz can SUGAR FREE /HFCS FREE tomato sauce
    2 cans Rotel
    1 packet low sodium taco seasoning
    2 boneless/skinless chicken breasts

Directions

MIx all ingredients together in a crock pot except chicken breasts. Lay chicken on top of the mixture and cover.

Cook on low for 6-8 hours or on high for 3-4 hours. 30 minutes prior to serving, remove chicken breasts, shred and return to the crockpot. Stir and serve.
