Introduction

Ingredients

2C boiling water
2C oat bran (or wheat bran)
5 C Whole Wheat Flour
5 tsp baking soda
1 tsp salt
1 C applesauce - unsweetened
2 C sugar
4 large eggs
4 C lowfat buttermilk
4C rolled oats
2 C chocolate chips, raisins or nuts.
Directions
This Entire batch will make 5 dozen muffins (each muffin cup filled 3/4 full before baking)
Boil water and pour over bran and set aside. Combine flour, soda and salt. - set aside
Mix together sugar and applesauce, add eggs and buttermilk.
Blend the two mixtures together, then add oats, bran and chips or raisins.
Fill greased muffin pans 3/4 full and bake for 15-20 mins at 375 degrees F. Store unused batter in fridge for up to one month and bake from fridge batter 20-25mins.
