Ingredients

    3/4 c chopped radish
    1/3 cup diced onion

    1 1/2 cup egg beaters
    1/2 cup diced tomato

    3/4 cup cheese

Directions

Boil chopped radish about 5 minutes, then put into 6 muffin cups with onion, bake about 5 minutes.

Mix egg beaters with diced tomatoes, season to taste, add to baked radish and onion. Bake 30 minutes more.

Sprinkle cheese on top of radish-egg "muffins" and bake 10 minutes more.

Cooked radishes are very mild and taste like cauliflower-y potatoes.
