Ingredients

    1 lb ground turkey
    1 large onion, chopped
    2 C. thick and chunky salsa
    2 C. black beans (1 C. dried beans, cooked and drained, to equal 2 C. cooked)
    1/4 C. zesty Italian dressing
    2 T. taco seasoning mix
    8 flour tortillas (6 inch)
    1 C. sour cream
    8 oz. shredded 4-Cheese Mexican style mix

Directions

Heat oven to 400.

Brown meat with onions on medium-high heat; drain. Stir in salsa, cooked beans, dressing, and taco seasoning mix.

Arrange 4 tortillas (cut as needed) on bottom of 13x9 inch baking dish that has been sprayed with cooking spray. Cover with layers of half each of meat mixture, sour cream, and cheese. Repeat layers. Cover with foil.

Bake 30 minutes. Remove foil. Bake an additional 10 minutes, or until casserole is heated through and cheese is melted. Let stand 5 minutes before cutting to serve.
