Ingredients

    2 c Fiber One Cereal
    4 Tbsp. Light butter, melted
    1 small container Cool Whip Free (8oz)
    Key Lime Juice (to taste)
    Splenda (to taste)

Directions

Begin by preheating oven to 350 degrees. In a blender or food processor, grind Fiber One to a breadcrumb-like consistency. Combine crumbs with melted butter and stir until well mixed. In an oven-safe pie dish sprayed with nonstick spray, evenly distribute Fiber One mixture, using your hands or a flat utensil to press & form the crust. Use your fingers to press it into the edges and up along the sides of the dish. Bake pie crust for 10 minutes. Set aside.

Mix defrosted cool whip, key lime juice, and splenda until you have the tartness and sweetness you like. Pour into crust. Refrigerate for 1-2 hours. Enjoy!

Serves 8.

NOTE: If you use real butter instead of light, it adds about 20 calories per slice.

    Though this looks super yummy Please if your looking for sugar free recipes make sure you are checking the Nutritional Info because this like other recipes I have seen is not truly sugar free. I am really sensitve to sugar content and even a meesly 3g send my sugar way up. - 9/22/08
