Introduction

Ingredients

    3 Chicken Breasts, skins and bones removed
    2 fresh sweet red peppers
    1 yellow or orange pepper
    2 tablespoons olive oil
    3 tablespoons raw cilantro
    2 cloves fresh garlic
    2 teaspoons fresh ginger
    2 tablespoons Tamari Soy Sauce
    6 tablespoons Tai Chili Sauce
    1 cup nonfat evaporated milk
    1 cup nonfat plain yogurt


Directions

Saute chicken in olive oil and set aside. Saute peppers in same oil. Re-add chicken to pan, and add all other incredients, except yogurt. Allow 10 minutes to simmer. Serve over brown rice, and add yogurt cold on top, to "cool" the spicy dish.
