Introduction

These muffins are delicious and very good for you! Your kids will like them and get their veggies at the same time. I use part whole wheat, white, light rye, spelt, kamut and oat flours. Ingredients

    3 eggs, beaten
    3/4 cup butter, melted (may use part or all oil)
    1 1/3 cup brown sugar (may use part agave nectar, honey or white sugar)
    2 t vanilla
    1 tsp cinnamon
    2 cup zucchini, shredded
    1 tsp soda
    2 tsp baking powder
    2 1/2 cup whole wheat, can use part other whole grain flours

Directions

Beat eggs, sugar, butter, vanilla and cinnamon together. Add zucchini and mix well.
In another bowl mix together the soda, powder and flour. Add to wet ingredients and mix until blended. Put batter into 15 muffin cups or 1 large loaf pan. cook at 350 for 20 minutes for muffins or 325 for 60 minutes for bread.
