Pitta bread
Mix all dry ingredients except salt, add half the water and all the salt, continue adding the water until all ingredients are combined.
Knead by hand or in a mixer with a dough hook until elastic.
Set aside to rise for 1 hour.
Tip onto a surface with some dry semolina and roll into a long sausage shape.
Cut into 12 equal pieces.
Roll each piese into a flat oval shape.
