These were super easy and tasty and my kids loved them. We had as a side dish with spanish rice and turkey enchilada casserole spark recipes. I do agree with prior review that it's closer to 4 servings than 8, but just entered as 2 servings for my nutrition log.
I use Black beans made from scratch for less sodium. It takes about 1/2 water & 2 cups black beans. I mash 1 cup beans at a time and add the water and simmer at the end. I agree this is more like 4 servings. One of my favorite "go to" recipes.
the coolest part is if youre really craving beans and eat the whole batch, its under 290 calories. lol. great recipe, gonna make soon!!
Am preparing brown rice to go with this recipe right now. Planning to use it as a topper over the rice for dinner. Will use a double portion for dinner, with low sodium corn as a side, and save the rest.
