these muffins are really good, made them 4 times, I had to add 1/4 cup sugar substitude, and added fruit and walnuts, etc. raisens, blueberries, also added more milk. They were handy to take anywhere. Just wonderful for no flour or eggs or no added fat.
Thanks Sunny! I do a very similar version of this recipe but I use greek yogurt instead of milk and I add splenda and plenty of cinnamon for a sweet, baked treat! And when I go to a party, I top it with fat free, sugar free pudding/jello and that keeps me contempt!
