it's a good recipe but it doesn't account for the amount of oil used in the nutritional info. Although its good...i'm giving it a low rating because of lack of info concerning oil.
Quinoa adds a great nutritional boost. Doesn't have the chewy texture of bulgar, but that's okay. It still tastes great.
I mixed the quinoa with winter wheat berries and used the veggies from Greek salad--makes a wonderful dish, and I served it over lo-fat cottage cheese, which makes it really rich tasting, higher protein, and a nice lunch
