I used low sodium bacon instead of deli sliced ham. It was delicious! Also added green, yellow and red bell peppers to the mix. Easy to make, quick to grab on your way out the door. Freezes well. Perfect! Submitted by:

Substitute skim milk, low fat mozarella cheese, use turkey bacon or lean turkey sausage and use half whole eggs or egg substitute and half egg whites (example 3 whole eggs, 4 egg whites). This will greatly reduce the total fat. Leave out the salt entirely. Sausage and bacon have plenty. Submitted by:

For those of you who always think everything is too salty...Most professional cooks use Kosher Salt. It has half the amount of sodium as regular salt. Keep a small dish of Kosher salt at the ready next to your stove. Submitted by:

Loved this recipe. I served it to guests at a 31 Party and everyone wanted the recipe. I omitted the onion and tabasco, and used egg substitute to lower the calories some more. I mixed everything in a bowl the night before and just put it in the muffin tins in the morning. So easy and good! Submitted by:

I used a non stick pan with 6 slots and halved all ingredients. the salt was still a bit high but otherwise delicious. Next time I will eliminate the salt and double the tabasco. This is a new favorite of mine. Submitted by:

Great recipe! Nice to make and have something fast and easy for breakfast. I did make it over by using only egg whites and using Farmland 95% fat free cubed ham (8 oz). This brought the calories down to 75.1 instead of 88 calories. Submitted by:

I use egg white substitute, leave out the ham and just use veggies like bell pepper and tomato and low fat shredded cheese. Put the veg and cheese in first then pour egg sub in over top and bake! Much healthier and so good! Submitted by:

Love this idea but I did a recipe makeover that brought it down to only 63 cals. 2.1 g fat and only 14 Mg of cholesterol :) it tasted brest. Even my dad who has been eating eggs and bacon every morning for his whole life loved it. Submitted by:
