Nutrition & Calorie Comments  

I wasn't happy with several (options) for this omelet. The three eggs are ok but would use pan spray (olive oil spray), chiobani rather than SOUR CREAM, Ditch the salt (high Na), and use spices in place of salt (pepper is always ok), and probably fry the shrooms, peppers in advance using garlic
Great Recipe. To make it even healthier, why not use olive oil vs. margarine. Most margarines have soy(not good if you have thyroid issues and many have trans fats.
More fat than protein? Maybe egg whites instead.
