Variations of this recipe abound. At our B&B, I used fat free sharp cheddar as it adds a little more flavor. I use it in my cheese sauces, scalloped potatoes, etc., too. It really helps. Also, Southwestern egg substitute would dimish fat and calories without flavor loss, if you like those flavors
