Added to my Made-Tested-LOVED category! Forgot to put the cheese inside & used .25 cup over the top. Didn't miss it at all. Also didn't have any onion powder or coriander-didn't miss them either. Served with fat-free sour cream, shredded lettuce & fresh diced tomatoes with a side of refried beans
I love this dish.. for an even easier dish.. just layer the tortillas and mixture of meat and sauce.. for a cassarol to keep the calories the same just cut it into ten servings.. these are low enough for 2 servings each..yummmm
I love the quickness of this recipe! It all came together so well, I used about half an onion in the meat and no salt to cut down the sodium. Our group loved it enough to come back for seconds!

I added a can of diced tomatos with hot peppers, 1/2 teaspoon of red pepper (it decreases appetite), browned the meat with 1/4 cup of water, then drained the water and fat in a colander.
This sounds good. I will use salt free tomato paste and cut the salt...add some garlic , maybe cilantro and jalepeno. I will most likely substitute flour tortillas for the corn.
