Potato & Turkey Sausage Cream Soup
This is a remake of the Olive Garden Zuppa Toscana. It is probably one of my all time favorite soups. I love to go to Olive Garden for soup, salad and breadsticks. I have switched out the high fat pork producs with turkey sausage and turkey bacon. I have also reduced the cream content, because after I made this the first time, it was almost too creamy with 2 cups of heavy cream. The good new is you can add a much kale as you want and get a good dose of greens with this soup. It has all of the elements of a balanced meal. Another tip, if you wish to remove some sodium, take out the turkey bacon. The soup is just as good without bacon because the turkey sausage is so flavorful.
