Ingredients

1/4 Cup Goats Milk
1 Cup Beef Broth (I use an MSG free version gluten free)
1 cup diced celery
1 Large Potato
1/2 C. diced carrots
3 Tbs fresh chopped chives
1 Tbs Extra Virgin Olive Oil
Directions
Wash and dice potato, skin and all. Brown lightly in olive oil.
Add remaining ingredients (EXCEPT goats milk) to a pot and simmer over medium heat just until the potato is tender, about 10 minutes. Reduce heat to low and add goats milk. Let simmer about another 5-10 minutes. I like to mash the potato's just a little so the juice will thicken slightly.
This is very rich, so a little goes a long way. I like to serve this as a main meal, about 1 - 1 1/4 cups and then finish it off with fresh fruit.
Season only to taste, I find that it really doesn't need anything else.
