OMG! This was Deliscious and very easy to make. I used skinless chicken thighs in place of lamb and added garlic & about 1 cup of fresh, chopped spinach about 6 or 7 min before adding the couscous. (so nutritional Info is gonna be off)

Sounds terrific. I'd add some veggies, like peppers, zucchini, and carrots, right before I put in the broth. If you put in enough, you could probably stretch this to four servings, with each serving having fewer calories.
