Ingredients

    1 cup brown rice, medium grain
    1/4 cup lemon juice
    2 cups red ripe tomatoes, chopped or sliced
    1 cod fillet
    Dash of salt

Directions

Cook the rice according to package directions.
Add lemon juice and allow the rice to simmer in the juice for 10-15 minutes.
In a separate pan, add a dash of lemon juice and bite size pieces of cod, sprinkled with a dash of salt. Allow the cod to cook through.
Add the cod and diced tomatoes to the lemon rice and allow to simmer for 10 minutes.
Serve while hot.

    This wasn't a bad recipe, but the all one texture thing didn't work for me. I like some of the ideas others have put out there for adding texture. I also think if I do make this again, I'd add pepper and maybe some garlic to give it more kick. Of the 6 eating it, 2 -no's, 2 yes, 2 - it was ok - 7/18/08

    Question:

    When you put the cod and lemon in a pan to cook, are we using heat to cook or the lemon to cook it, the way you do for a ceviche? The recipe doesn't say.

    I'd like to try this with changes to pull it out of the high-carb meal category.

    following the cooking instructions over cooked my fish also I added a cup of broccoli on top for color I started the rice and after the stir I placed my seasoned fish fillet in a steamer basket on top of the rice cooked 10 minutes added the broccoli finished steaming and it was good to go

    i made this last night using halved grape tomatoes and salmon i had on hand. pan fried salmon chunks in a bit of olive oil, added pepper, thyme, and onion powder to the mix after i added the fish and tomatoes to the rice. it was very good. it's a very versatile recipe. - 7/14/08

    O.K.
    My hubby liked it. I didn't at all. All one colour and texture. I added some parsley to give it some colour. Perhaps would be better if I had the tomatoes in it, but even still don't think I'd like it. (the texture thing.) - 4/9/08

    This is a great recipe. I use the same recipe with salmon, tuna, and boneless/skinned left-over roast chcken from the last night's meal. The chicken provides an interesting taste variation--the lemon is the key! - 12/14/07
