Ingredients

    24 oz lean ground beef
    1 1/2 cup onions, chopped
    1/2 cup green peppers, chopped
    2 stalks raw celery
    1/2 cup white rice, long grain
    1 tsp salt
    1 1/2 tsp black pepper
    1 medium-sized head of cabbage
    1 1/2 cup vegetable juice cocktail

Directions

Preheat oven to 350 degrees.
Shred the cabbage and chop the celery.
Saute the beef, onion, peppers and celery.
Remove, drain and add rice, salt and pepper.
Layer with shredded cabbage in a large casserole dish.
Pour vegetable juice over entire casserole.
Bake covered for about 1-1/2 hours.

    I made this with turkey instead of beef, red cabbage and shredded carrots. No added salt, substituted red pepper flakes and everyone loved it. This is a keeper as well as one to share with family. Thanks for a great dinner. - 7/16/10

    This recipe is genius! I love cabbage rolls but I hate the time investment. This recipe is a perfect solution. When I made it, I used ground bison and omitted the green pepper and celery and used freshly shredded carrot instead. I found that I needed more liquid, onion & garlic powder and salt. - 10/12/09

    I've made this several times but I always thought it still needed something. I did tomato sauce instead of the V8 and added a can of diced tomatoes and some Louisiana hot sauce and it is just nearly perfect! - 1/25/11

    MELLIEGAL1, I guess you must have figured it already, but normally you'd use raw rice, it should cook in the juices of meat and veggies. A hint from the original cuisine: add a couple of tbs of skim milk to the rice before you start cooking. Makes it more tender and creamier without extra calories! - 11/21/14

    I thought it was a little bland. Next time i will amp up the veggies, maybe add some tomato. More pepper and will use more v8 juice (low sodium so i can have more sauce). - 2/14/12

    I had my doubts about this recipe when I put it together, but it is great! I added a whole bottle of medium heat taco sauce and left out the celery. I also added some diced tomatoes for moisture and it was sooooo good!! Will definitely make this one again! - 11/20/09

    Incredible idea. I avoid making stuffed cabbage even though we love it. I like the idea of shredding it. Heck, if you're that busy you can get it pre-shredded in a bag from the grocery store! My family prefers using 1/2 ground turkey & 1/2 ground chicken breast in all out ground meat recipes. Yum! - 6/21/09

    Our whole family liked this recipe. I put all ingredients in the crock pot. Rice took longer than I expected, but I used Basmati rice. I added zucchini and spaghetti sauce powdered mix right before serving - it was pretty bland. I used a 32 oz bottle of veg juice. I would make this again. - 1/13/09

    This was WONDERFUL! My husband even loved it! The only things we did differently were to use brown rice instead of white, and we added worcestershire sauce to the beef and veggie mixture while it was cooking.     I made this recipe (with much less beef, tomatoe sauce and brown rice) and it came out more like chili than cabbage rolls. So I added some kidney beans, corn and chili powder and made an awesome chili! I even used it as taco filling on the first night! Fabulous! Hubby barely noticed the cabbage! - 10/22/07

    Yummmmmm! This was such a compromise from the individual cabbage rolls that I love but don't make for long intervals. I'll make the loose ones often. I substituted tomato soup and Classico Tomato Basil, mixed together, and regular pearl rice which I prefer & of course, had to add garlic! IROB3581 - 10/12/07

    My grandmother used to make cabbage rolls and they're so much work! I also replaced the white rice with brown rice and will use turkey meat on occasion, but LOVE this recipe for it's simplicity, and that I can drain the fat from the beef, and because it's YUMMY!
