Introduction

This dish is our family's favorite and is different than the traditional marshmallow-topped recipe. This dish is our family's favorite and is different than the traditional marshmallow-topped recipe.

Ingredients

    4 medium sized yams or sweet potatoes (to yield 4 cups)
    1 cup orange juice
    2 T orange zest
    1/3 cup brown sugar
    1 T cornstarch
    pinch of salt
    3 T butter
    Rosemary, if desired

Tips

This dish is also good with a bit of fresh rosemary.


Directions

Cut yams in quarters. Cook at a slow boil until fork tender (with skins on). Drain and remove skins. Place cut side down in casserole dish.

Melt butter in saucepan on stove. Add dry ingredients. Whisk in orange juice and cook on medium high until slightly thickened. Pour over yams.

Bake in 350 oven for 50 minutes.

    Have used this recipe for a long time - once the kids were out of the marshmallow topping! Have sliced the potatoes after whole potatoes were boiled. - 11/12/13

    This sounds really good! My Orange Sweet Potatoes are made with orange marmelade and pecans...thats it! and they are really good!

    Today is Thanksgiving and as I was flipping through recipes for yams, I came across this one. What a nice blend..even had to run to the store for OJ.....the yams are in the oven as I write this. The sauce is delicious...... I topped it with pecans. Thanks and happy turkey day! - 11/25/10

    I made this for Thanksgiving, and loved the flavor, wasn't really crazy about the texture. I think the next time I make this, I will just bake the sweet potatoes so they are a little firmer. - 11/29/13
