Introduction

Ingredients

    1 tablespoon olive oil
    2 tablespoons finely diced celery
    2 tablespoons finely diced onion
    2 tablespoons finely diced green pepper
    1 package frozen whole kernel corn (10 oz.)
    1 cup peeled, diced, 1/2" raw potatoes
    2 tablespoons chopped fresh parsley
    1 cup water
    1/4 teaspoon salt
    black pepper to taste
    1/4 teaspoon paprika
    2 tablespoons flour
    2 cups low-fat (1%) or skim milk
    1/4 cup fresh parsley, minced

Directions

1. Heat oil in medium saucepan.

2. Add celery, onion, and green pepper and saute for 2 minutes.

3. Add corn, potatoes, water, salt, pepper, and paprika. Bring to a boil; reduce heat to medium; and cook, covered, about 10 minutes or until potatoes are tender.

4. Place 1/2 cup milk in a jar with tight fitting lid. Add flour and shake vigorously.

5. Add gradually to cooked vegetables and add remaining milk.

6. Cook, stirring constantly, until mixture comes to a boil and thickens. Serve garnished with chopped fresh parsley.

Yield: 4 servings--Serving Size: 1 cup

    If you want a creamier soup without adding calories, put a portion in the blender. I always do that when making corn or potato soup to get a rich texture without cream. - 9/29/09

    My family and I really enjoyed this recipe. I substituted low fat chicken broth for the water and added a very small amount of lean back bacon to make it a bit more hardy. We all really enjoyed it!! - 8/11/09

    I fried up some chopped bacon then added vegies and sauted them before adding liquid, few chilli flakes and cumin. I also use frozen corn and cream of corn instead of flour to thicken soup. - 4/18/09

    Yummy! I added way more vegis than the recipe called for (I heart onions and celery) and it turned out delicious. It didn't thicken up for me, even after I boiled the bageesus out of it, but its tastey :) - 2/25/09

    I used chicken stock instead of water, added carrots, and used skim milk. I think you could get away with using dried parsley as well. It was a hit with my vegetarian son! - 10/18/07

    I read the reviews and did some of the additions, evap.skim milk, chichen broth, a little chipolti powde and lump crab. It was great and filling. I look forward to the leftovers for lunch tommorrow.

    YUMMY!!! My kids really liked this, I used the fat free half and half instead of milk. And I did not add the green pepper. Mine thickened up just fine. I did add extra salt and pepper and dried parsley for added flavor. Will definitely make this again!!! Thank you for a great low fat soup! - 10/23/07

    This is a wonderful recipe and very easy. I modified it by increasing the ingredients so it can feed my family. I also added garlic and green onions and shrimp to make it a Shrimp and Corn Chowder. I also used low sodium/low fat chicken broth instead of water. Delicious!!! - 10/15/07

    Absolutely fantastic! It took very little time to make, with simple, wholesome ingredients. My family loved it (requested we serve it in a bread boule next time).     I made this following the recipe exactly. Very very good! It was a little thin, so I thickened it with a little cornstarch and water and let it boil longer as I stirred.

    Enjoyed this. Made a few changes - was short on time, so used those diced potatoes you find in the refrigerated section of the supermarket. When I added the water, I threw in about a Tbls of chicken bouillon granules, used 1 can evap skim milk (rest 1%) and added 4 slices of cooked turkey bacon. - 10/12/09

    Good, but skip the flour for thickening by removing some of the soup, blending the rest with a hand blender and then returning the other soup to the pot. And I hope that anyone with a thyroid condition is NOT adding any type of soy product to their foods. (just a note) - 10/11/09

    I make corn chowder much the same only leave the green pepper out. I cook the celery and potato together then add frozen corn and a can of creamed corn then add your 1% milk (I use carnation milk and the water that the potato & celery were cooked in. Seasoning as you like and a dab of butter Nana B - 10/23/07

    I used fresh corn and scraped the cobs to get the "milk" for this soup. I also added sazon and shrimp, these additions took it off the hook. I also added some baby bam that I make and keep in the freezer. - 9/29/09

    I have used a similar recipe before but add chopped cooked chicken to provide more protein, chicken broth instead of water, canned cream corn (2 large cans) as well as 1 large can (or fresh) whole corn niblets. To spice it up a little, I also add curry and red pepper to taste. Good luck, everyone! - 9/29/09

    Next time I need to double the recipe because my son kept asking for more! Also, I think I'm gonna used creamed corn and less milk and also add some ham or stew meat. Mine didn't thicken very well so I just added some cornmeal until it was thick enough. Otherwise very tasty! - 10/25/09

    I really like this recipe, but I leave out the bell pepper because it gives me crazy heartburn and the celery( I just don't care for cooked celery) and I add a little more milk, otherwise its great. - 10/15/07

    I made a Corn and butternut squash chowder soup from Martha Stewart's Everyday Food magazine, and just left out the heavy cream. It was made with onion, butternut squash, frozen corn, 33% less sodium chicken broth, olive oil, curry powder, & pepper. It was really good & very easy to make. - 9/29/09

    I plan to make this and will probably leave out the green pepper. I would think it wouldn't be a very hearty tasting soup with just skim milk so I plan to use Darigold's Fat Free Half & Half--it gives a rich taste without the fat and calories. - 10/17/07

    Using chicken broth would make this tastier. Also, to thicken w/o cream, I put half of the bulk in a blender and use some instant mashed potato flakes for consistency. I season it more as well. Good base recipe but 'Make it your own!'. What's with the double spaces.. yikes! - 8/10/12

    We made this tonight, without changes and felt it was very satisfying. A keeper. I have to watch carbs, and this fit within what is o.k. per meal, but I have a hard time believing the carb count for a full cup, with all that corn and potato! Can it be true? - 9/13/10
